Artichoke casserole

This casserole is very easy to make. It takes only a few minutes to arrange all ingredients in a pan and the oven does the rest.
Ingredients:
  • 8 oz cooked wild rice   
  • 2 oz. shredded vegan cheese or store bought
  • 2 TB unseasoned whole wheat Panko or dry bread crumbs 
  • 1 large tomato
  • 1 - 14 oz. can or jar artichokes
  • 2 TB vegan mayonnaise such Earth Balance
  • 2 TB vegan sour cream 
  • 2 green onions
Directions:
Spread rice on a normal individual containers or baking pan and sprinkle with half of the cheese, bread crumbs on top, top with tomato, and artichokes.
 
In small bowl mix mayonnaise, sour cream, and green onions. Pour this over the casserole. 
Top with the rest of the cheese. 


Bake a t 350° F for 25 minutes. 

Yields: 2 servings.
