This is another way to eat raw kale and get all the benefits. Adding walnuts and basil, it's better than regular pesto.
You can eat it as a dip, or serve on top of pasta and polenta.
Ingredients:
Mix all ingredients in a food processor until smooth. Add more olive oil if necessary.

- a handful of walnuts (toasted)
- a handful of basil leaves
- chopped garlic (depending on your taste)
- 1-2 TB extra virgin olive oil
- pepper to taste
