Kale walnut pesto

This is another way to eat raw kale and get all the benefits. Adding walnuts and basil, it's better than regular pesto. 

You can eat it as a dip, or serve on top of pasta and polenta.

Ingredients:
  • A half bunch of kale (washed and stems removed)
  • a handful of walnuts (toasted)
  • a handful of basil leaves
  • chopped garlic (depending on your taste)
  • 1-2 TB extra virgin olive oil 
  • pepper to taste
Directions:

Mix all ingredients in a food processor until smooth. Add more olive oil if necessary.

Servings: 2-3
