After doing an extensive research about a good vegan recipe for peanut butter cookies, I came up with this one.
They came out well but in my opinion more peanut butter is needed for better flavor.
Ingredients:
Directions:
Mix oat flour with almond meal and baking powder.
In a food processor mix banana, applesauce and canola oil.
Blend all dry and wet ingredients well.
Preheat the oven at 350°F. Line a cookie sheet with parchment paper (not bleached).
Divide the mix in around a dozen balls. Flatten in crisscross pattern with a fork. Depending on your oven, bake until light brown, 15 to 20 minutes.
Cool on baking sheets for a few minutes. Transfer to rack to cool completely.
It yields to a dozen cookies.

- 1 banana
- 1/2 cup unsweetened applesauce
- 2 TB organic canola oil
