Polenta

I love Polenta! It is a simple dish people can make in a few minutes. Many say it requires a lot of stirring, I don't find so complicated.

It's a very typical Italian dish although corn wasn't known until the Spanish conquers brought it to Europe. According to some sources, it was made since Roman times using farro, millet, spelt or chickpeas. 

Polenta can be eaten with water and milk. I usually add some vegan cheese or a spoonful of tomato sauce or any pesto on top.

Ingredients:
  • 1 cup hot water
  • 1 cup non-dairy milk
  • 1 cup organic polenta
Directions:

Heat the water in a saucepan at medium heat until starts boiling. Add non-dairy milk and whisk in the polenta. Reduce the heat to low. Stir until it doubles its volume. It should be sticky and tender. it will take around 15 minutes. Add more water or milk if necessary. 

Serve it according to your taste. In this case, I added homemade tomato sauce made with garlic, peppers, onions, and tomatoes.
