Tiramisu

The original Tiramisu is a flavored Italian dessert made of ladyfingers, coffee and mascarpone cheese with a touch of cocoa on top.

To make it vegan, I had to substitute the heavy mascarpone for vegan sour cream and vegan cream cheese.

I added equal part of dark rum to the coffee when dipping the ladyfingers. 

Ingredients:
  • 1 package ladyfingers (around 24 biscuits)(see Note)
  • 1/2 cup coffee
  • 1/4 cup dark rum
  • 1/2 cup vegan sour cream
  • 1/2 cup vegan cream cheese
  • 1/4 cup cocoa (I used unsweetened)
Directions:

Divide the ladyfingers and the cream mix in equal parts to make 4 layers.

Mix coffee and rum in a bowl and soak each biscuit both sides. Do this gently. Otherwise, you will have very wet biscuits and no liquid left. Add more coffee and rum if necessary.

Arrange one layer on the bottom of a glass loaf baking pan filling it completely. Spread part of the sour cream and cream cheese. Repeat until all rows are arranged without leaving any empty gaps.

Top with the cream mix and dust with cocoa.

Chill for at least one hour before serving.

Note: I used Lady Fingers, which are not vegan but vegetarian. I wasn't able to find vegan cookies this time.
