It was a good idea for Laura Theodore (Jazzy Vegetarian) to make something green and healthy for St. Patrick's Day... a broccoli soup!
I read her recipe but decided to modify it a little bit to my taste.
Ingredients:
Steam broccoli over medium-low heat for around 7-10 minutes or until tender.
In a medium pot pan, cook the onion and garlic with the water (or olive oil) until tender.
Put the steamed broccoli, onion, garlic, broth, non-dairy milk, and pepper into a blender and process on low until smooth. Allow the steam to scape leaving some space at top of the blender.
Add more non-dairy milk if necessary.
Transfer the soup to the medium pot pan and cook until heated through stirring often.
Serve with whole grain crackers or bread.
Makes: 3 servings

- 2 TB water (or olive oil)
- 1 medium onion chopped
- 3-4 garlic cloves (depending on your taste), chopped
- 1/2 cup low-sodium broth
- 1-1 1/2 cup non-dairy milk
- ground pepper to taste
