Cranapple Walnut Cake

I got this recipe from a local supermarket magazine. The original recipe called for 2 eggs and almost two cups of sugar. I wouldn't bear the sweetness in this cake. So, as usual, I modified for my mix of applesauce and banana adding two tablespoons of organic canola oil for moisture.

Ingredients:
  • 2 cups of whole wheat pastry flour
  • 1 tsp baking powder (without aluminum) 
  • 1 tsp cinnamon
  • 1/2 tsp fresh nutmeg
  • 1/2 cup chopped walnuts
  • 4 oz. dried cranberries
  • 1 medium apple, peeled, cored, and thinly sliced
  • 1 banana
  • 1/4 cup organic applesauce
  • 2 TB organic canola oil
  • 1/2 cup almond milk (or any other non-dairy milk)
  • 1tsp pure vanilla extract
Directions:

Preheat oven to 350 ° F and lightly spray pan with oil.

Mix all dry ingredients in a medium-large bowl: flour, baking powder, cinnamon, nutmeg, walnuts and cranberries. Add the apple slices.

In the food processor, mix banana, applesauce, oil, almond milk and vanilla. Pour this over dry ingredients.

Mix well without over mixing. Add more almond milk if necessary. 

Spread batter in a glass loaf pan and bake for around 45-50 minutes or until a toothpick comes clean. Continue baking until done if necessary.

Place pan on a cooking rack for at least 15 minutes before serving.
