Ful Mudammas

Ful Mudammas is part of a daily Egyptian’s diet, especially during Ramadan, when it’s eaten for breakfast, so people who are celebrating this Islamic holiday are able to fast for a full day. 

With its large amount of fiber, this dish is nutritious, healthy and very important for our diet. This is one of the main features and characteristics I look for when planning and making a dish. We can eat healthy and tasty food at the same time.

The original recipe recommends hard-boiled eggs, but I’ll pass this because I don't eat them anymore.

So this is my modified version:


Ingredients:

  • 1/2 cup dried fava (small broad) beans (or 1 can fava beans)
  • 1-2 cups water, to cover 
  • Olive oil
  • 2-3 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 tsp ground cumin 
  • 1 tsp chili powder
  • Chopped fresh flat-leaf (Italian) parsley
  • Lemon slices or wedges
  • Pepper to taste

Directions: 


  1. If you are using canned fava beans, skip #2 & #3 and continue with #4
  2. In a bowl combine the fava beans and water to cover them and let soak in the refrigerator overnight. 
  3. The following day drain beans and place them in a saucepan, adding the water making sure the beans are covered. Bring to boil, reduce the heat to low, cover and simmer until tender. The cooking time will depend on the age and the size of the beans. 
  4. In the meantime, heat oil and cook garlic and onion until soft.
  5. When the beans are ready and drained add them to the garlic, onion, cumin and chili powder. Ladle into bowls. Garnish with parsley and lemon slices.
Pita bread is an ideal accompaniment.
