After a few tries using different recipes from books and online, I came up with this recipe where the texture of the final cheese was wonderful!
Ingredients:
- 1 cup raw macadamia nuts soaked overnight with filtered water
- 1 1/2 cup filtered water
- 1 tsp yellow miso
- 1 TB nutritional yeast flakes
- 2 TB agar powder
Drain the macadamias well and discard the water. Add all ingredients to a high speed blender. It could be done in a regular blender or food processor soaking the nuts longer but the texture would be different having some bits from the nuts.
Blend until thick and creamy.
Pour the mixture in a medium saucepan at medium heat and cook until it boils for a few minutes. This will let the agar to thicken.
Pour in a glass container and let stand at room temperature. Chill it in the refrigerator.
Store in an airtight container up to 1 week.
