Millet pilaf with tahini-herb sauce

Millet is similar to wheat and provides good nutrition: vitamin B6, niacin, and folic acid along with calcium, iron, potassium, magnesium and zinc.

For a fluffy millet, let it cook alone without stirring.

Ingredients:
  • 2 TB olive oil
  • 1 clove garlic minced
  • 1 cup millet
  • 1 medium onion thinly sliced
  • 1 zucchini, shredded
  • 1 large carrot, shredded
  • 1 bunch green onion, both green and white parts thinly sliced  
For the tahini-herb sauce:
  • 1/2 cup Italian parsley
  • lemon juice to your taste
  • 3 garlic cloves
  • 1/4 cup tahini
  • black pepper to taste
Directions:


Heat the oil in a medium saucepan, add the garlic, onion, and millet. Stir well. Cover with plenty of water and simmer for 20 minutes. 

When millet is ready, add zucchini, carrot and green onions. Cook until these veggies are tender.

For the sauce:

Mix all ingredients in the food processor until creamy. 

Serve immediately and top with the tahini sauce.
