Vegan butter

Oh, I finally found an easy recipe for vegan butter! Reading a Meatless Monday article in the Huffington Post, it happened to find Miyoko Schinner making this! 

Ingredients:
  • 1 1/2 cup refined coconut oil melted
  • 1/2 cup soy milk
  • 1/4 cup canola oil (or olive oil)
  • 1 tsp apple cider vinegar
  • a pinch of salt (optional)
  • 2 tsp liquid lecithin (or 6 TB powder)
Directions:

Mix all ingredients in a high-powdered blender until well mixed. Pour in silicone containers or any other one. 

Using a silicone container will allow to unmold the butter, otherwise you will have to take it from the container.
