Yummy Bowl

I love the Yummy Bowl from Café Yumm! although I have it without the cheese and sour cream. 

Just looking around the internet for any similar recipe, I was able to find this thanks to Mary-Charles Rasbach with The Original Yummy Bowl recipe.

So I adapted the recipe to make it vegan omitting sour cream. Even without the sour cream, I can add 9 items to the bowl.

Ingredients:

For the Yummy sauce:
  •          1/2 cup water
  •          1/2 cup fresh lemon juice
  •          1/2 cup organic canola oil
  •          1/2 cup almond meal or finely chopped almonds
  •          1/3 cup nutritional yeast
  •          1/2 cup cooked garbanzo beans
  •          1/4 cup cooked organic soybeans or 1/3 cup organic tofu
  •        1-2 garlic cloves, minced or pressed
  •          1 1/2 tsp curry powder
  •          1 tsp dried oregano
  •          1 tsp dried cilantro
For the bowl:
  • brown rice, cooked
  • black beans, cooked
  • salsa fresca or chopped tomatoes
  • shredded vegan cheddar cheese
  • a few slices of tempeh
  • a few tablespoons of Yummy sauce
  • sliced fresh avocado
  • sliced black olives
  • fresh chopped cilantro 
To make the Yummy sauce:

Mix water with lemon juice in a bowl and set aside.

Mix the rest of the ingredients in a food processor or blender until smooth. 

Add the water and lemon juice mix and keep the food processor running until creamy and smooth.

Transfer to a glass container or glass jar. Refrigerate overnight to allow the flavors to blend.

To assemble the Yummy Bowl:

Place ingredients in layers in single serving bowls starting with rice, beans, salsa fresca, vegan cheese, tempeh, and Yummy sauce. At this point, you can warm the bowl for a few seconds if desire.

Add avocado slices, olive slices, and garnish with fresh cilantro.
