After trying a raw macadamia cheese recipe I found online, I came up with this recipe that fits my expectations.
Ingredients:
1 cup raw macadamia nuts (soaked for 8 hours or overnight)
1 cup raw almond nuts (soaked for 8 hours or overnight)
1 1/2 cup filtered water
2 TB agar powder
½ tsp yellow miso
1 TB nutritional yeast flakes
Directions:
Drain well the soaked nuts. Place them in a blender or high-speed blender along with the rest of the ingredients.
Purée them until smooth. If necessary, scrape down the sides with a spatula and/or add a bit more water depending on the texture you want.
Pour the mix on a saucepan on medium heat stirring to avoid sticking. When hot enough, this will make agar to work, pour it into a container that will give the shape of the cheese.
The texture could be ricotta like but well pressed will give a better shape.
Let the cheese to cool down, cover and refrigerate. It could be kept in an unbleached parchment paper later on.
