Banana nut bread

This bread is ideal for your afternoon tea or coffee. I replaced the original recipe with rolled oat to make it nutritious.

This is my high-fiber version:

Ingredients:
  • 1/2 cup rolled oats
  • 1-1/2 cups whole wheat pastry flour
  • 2 tsp baking powder
  • 2 cups walnuts
  • 3 large ripe bananas
  • 1/2 cup applesauce
  • 2TB neutral oil or homemade vegan butter (see Note)
  • 1/4 cup almond milk
  • Add sugar to your taste
Directions:

Preheat oven to 350°F. Using the food processor, run the oats until look finely grounded like flour. In a large bowl, mix flours, and baking powder.

In a small bowl mash bananas, add applesauce, oil, almond milk, and walnuts.  

Add the mixture to the dry ingredients and mix until smooth.

Add more milk or flour if necessary.

Pour into greased loaf pan. Depending on your oven, bake it for 45-50 minutes or until a toothpick comes clear.

Cool in rack. Remove from pan after 10 minutes.
