Peanut butter cookies (my version)

 After doing an extensive research about a good vegan recipe for peanut butter cookies, I came up with this one.

They came out well but in my opinion. Of course, it depends on your taste.

Ingredients:

  • 1 cup oat flour
  • 1 cup almond meal (This makes baked goods moister and gives them a coarser texture)
  • 1 cup peanut butter powder
  • 2 tsp baking powder
  • 1 banana
  • 1/2 cup unsweetened applesauce
  • 2 tbsp. avocado oil
  • 1 cup peanut butter

Directions:

Mix oat flour with almond meal, peanut butter powder, and baking powder. 

In a food processor mix peanut butter, banana, applesauce and avocado oil.

Blend all dry and wet ingredients well. 

Preheat the oven at 350°F. Line a cookie sheet with parchment paper (not bleached).

Divide the mix in around a dozen balls. Flatten in crisscross pattern with a fork. Depending on your oven, bake until light brown, 15 to 20 minutes. 

Cool on baking sheets for a few minutes. Transfer to rack to cool completely.

It yields to a dozen cookies.
