I live in Salem, Oregon, where unfortunately there wasn't a particular vegan restaurant when I moved here. Most had vegan/vegetarian options. Sometimes when eating out, I had no choice to have some vegetarian dishes. I always try to avoid them though.
Luckily, in 2017 a vegan restaurant opened in West Salem called The Space Concert.
This restaurant offers all vegan dishes plus live music. When they
started, it was only open for dinner so I reserved a date to have dinner
there but didn't stay for the music.
Just looking back their site, I found they are open for brunch on weekends.

In 2017 a new restaurant opened in West Salem: Chickpea. It's all gluten free plus vegan dishes if you don't get the Parmesan cheese!
Chickpea pasta is delicious and has more fiber, protein and fewer carbs than regular pasta.
Update: Unfortunately, this restaurant closed at the end of June... such a pity!
It's all organic vegan deli restaurant in Portland. They serve only vegan dishes. Their food is fresh and made from scratch.

It's a health food store in Corvallis, one of my first places I went to find non-dairy foods when just moved to Salem. They have good quality products from produce to cleaners and pet food. In addition to this, there is a huge bulk section and a salad bar with hot food where people can eat.
